New Recipe #2 - French Fry Casserole

Okay, this is NOT a new recipe for me. This was a staple growing up at our house but each of my siblings that still make it, make it a little differently. Here's how I make it.

1 bag shoe string french fries 32 oz
2 small cans cream of mushroom soup
1 can evaporated milk.
a couple handfuls of shredded cheese - maybe 2 cups (I use colby or cojack but cheddar works well also.)

Empty bag of fries into a 9 x 13 casserole pan sprayed with cooking spray.
Mix soup, milk and cheese in a bowl, then pour over fries.
Stir the fries a little so they are all covered with soup mixture.

Bake at 350 for an hour. We love to serve this BBQ chicken and broccoli. We had it for dinner last night. My kids love it and it's a hit at every potluck I've ever taken it to.

Other variations - you can add:
onions
garlic
ground beef or maple sausage (we use maple sausage sometimes if we aren't have BBQ chicken)
I can't think of any others.

  1. This sounds very similar to the tator tot casserole recipe we have around here. We use sour cream and add shredded chicken or hamburger on top pf the tator tots ( in addition to some of your other ingredients. It is generally our main dish though. I will have to try your version sometime.
